Besides a nice weight loss benefit, I do very well on Keto regarding inflammation and pain. I also notice a significant decrease in the instability aspect of my joints and a decrease in subluxations. My eosinophils level (inflammatory marker) in blood work is usually over 1200 cells/microL. The normal range is 0-500 cells/microL. If I do the Keto diet consistently, my eosinophil levels return to normal values. My body overall also has more energy and less fatigue associated with EDS.
A sad downfall, in my case, is that I notice staying on this diet for several months, my estrogen seems to get raised, and I start to have issues with estrogen dominance. I mostly do strict keto for a few weeks and avoid certain carbs and ingredients the rest of the time. This seems to work very well for me. I continue to research aspects of fixing the estrogen issue, so I can keep doing Keto all the time. My body feels best in a ketosis state. An added problem is that I haven't found any medical professional around here to manage estrogen issues in Zebras or patients with other co-morbidities.
Key to a successful Keto Diet is, in my experience, a strict way of tracking your net carbs and ketone/glucose levels. It sounds complicated, but it is not at all. It may take a little getting used to it, but it's super easy once you get your routine. I track my net carbs with a diet tracker app. The Ketone and Glucose I measure with a Keto Meter.
I don't feel the diet is restrictive when done correctly. If I want to drink a glass of wine or beer, I make sure I plan my net carb intake correctly for the day. Measuring your ketone/glucose levels also teaches you how you respond to certain foods and carbs, and you learn how much net carbs you need to remain in ketosis. I also noticed that my body can quickly return to ketosis if I happen to kick myself out of it.
Another great aspect of Keto: I don't have any food cravings; I can walk by a jar of gummy bears or chocolate without the urge to eat them. Everyone who knows me, if I'm not in a ketosis state, I'm eating ice cream for breakfast. No kidding!
Also, my ADHD is way less severe in a ketosis state. If it wouldn't be for that stupid estrogen issue, I'd always be in ketosis. If you happen to know a solution, please, please tell me about it.
